It's probably not the thermostat, or else it would be overheating while driving, too. Check coolant, add if needed, and then look to the fan clutch. With the engine off, spin the fan with your hand pretty hard.

It will get you stuck in dry soft sand also as frt, and rear ends have differing gear ratios. Run tires ( 33's at least) at about 8 lb to 10lbs.
