Got to about 10 minutes in and was noticing the internal temp on the digital gauge was saying 12 degrees but the door temp gauge was saying it was at sear. Obviously, I input higher than what I'm going for, but it still fluctuates within a 20 degree range, and the built in temp reader (in the smoker) is generally wrong.
