What I have found is that the AI can declare war on you only if you have declared war on them. So if you just take rebel towns or buy the town, the AI can't touch you. In one of my saves I am in year 50 or so with 4 towns and 4 castles that I took from rebels or bought. I've had independent clans declare war on me, but they don't matter.
